Red Velvet Cupcakes


2 1/2 cups all purpose flour
1 cup sugar
2 tbsp cocoa powder
1 tsp baking powder
1/4 tsp salt
1 tsp bicarbonate of soda
1/2 cup butter
2 eggs
1 cup buttermilk (1 cup fresh milk + 1 tbsp vinegar : stand for 10 minutes before use)
1 tsp vanilla
1 tbsp red food colouring

- combine flour, cocoa, baking powder, bicarbonate of soda and salt, then sift three times.
- in a mixing bowl, cream butter and sugar. add eggs one at a time, making sure to beat well after each egg.
- add 1/4 of dry ingredients to creamed mixture the approximately 1/4 of buttermilk alternating until mixed well. make sure you start with the flour and end it with the flour as well. mix in vanilla and food colouring.
- fill in the muffin cup. bake in a preheat 160 celcius oven for 20 minutes.
-let 5 minutes in the oven and cool completely before frosting.

Cream Cheese Frosting
125 gm cream cheese
1/2 cup butter
1/2 cup icing sugar
1 tsp vanilla

- mix well and deco on the cupcakes...
